White Bean Dip for Breadsticks, or Sandwiches on Frozen Bagels

Ingredients for approximately 8 individual servings:

  • 2 cups white kidney beans, rinsed and drained
  • 3 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  •  ¼ cup water
  • 2 tablespoons dried rosemary
  • Salt and pepper

Instructions:

  1. Place all ingredients in a blender or food processor and blend until mixture is completely smooth. Taste and season with salt and pepper to taste. Serve chilled, or at room temperature.
