Use Leftover Frozen Bread Dough to Make Brown Betty

deiorios dough ballAs a restaurant owner, you undoubtedly know how important it is to squeeze everything you can out of every cent your business has. That means finding two recipes for one menu item, and using whatever scraps your kitchen leaves behind. Leftover frozen bread dough is one of the easiest things to turn into something else simply because it’s so versatile. And it’s delicious when you turn it into this recipe for Brown Betty.

Ingredients:

  • Leftover wholesale bread, or other package dough such as breadsticks or dinner rolls
  • 4-5 red or green apples, cored and thinly sliced
  • 3 tablespoons brown sugar
  • 1 tablespoon cinnamon
  • 1 tablespoon nutmeg, plus more for sprinkling
  • 2 tablespoons butter, melted
  • 2 tablespoons butter, softened to room temperature and broken up into bits

Instructions:

  1. Lightly grease a casserole dish and preheat the oven to 350 degrees Fahrenheit.
  2. Using your hands, break the bread into very small pieces (smaller than croutons) and toss with 2 tablespoons of melted butter, cinnamon, brown sugar, and nutmeg.
  3. Use about 1/3 of the mixture to layer the bottom of the dish.
  4. Place a thin layer of apple slices over the bread crumb mixture.
  5. Repeat layers using remaining ingredients, ending with the apples on top.
  6. Place the softened butter bits around the apples (evenly distributed) and place in the oven. Bake for about 20 minutes, or until apples are tender.

When serving this old-fashioned treat in your restaurant, don’t forget to always top it off with vanilla ice cream or whipped cream to take your customers back to a simpler time!
