Turn Thin Pizza Crust into Gourmet Pizza from the Middle East!

What could you possibly do that could be different, especially when working with your basic thin pizza crust? When you want something truly different, think ethnic – think delicious Middle Eastern food that’s easy to make, and that your customers will have truly never seen before!

Ingredients:

  • 1 thin or Gluten free pizza dough
  • 1 pound lean ground lamb, browned
  • 2 cups arugula
  • ½ cup cherry tomatoes, cut in half
  • ¼ cup red onion, sliced very thinly
  • 3 green onions, sliced very thinly
  • 1/3 cup mint leaves, chopped roughly
  • ¼ cup parsley, chopped roughly
  • 2 cloves garlic, minced
  • 2 tablespoons tomato paste
  • ½ teaspoon chili pepper flakes
  • 2 tablespoons lemon juice
  • 2 tablespoons tahini
  • 2 tablespoons water
  • Salt and pepper to taste

Instructions:

Preheat oven according to what package dough states, or the temperature your oven cooks pizza at (this will vary largely depending on the type of oven you’re using.)

  1. In a large bowl mix together mint, green onion, parsley, and garlic. Add lamb, tomato paste, chili flakes, salt and pepper.
  2. Place the lamb mixture onto the dough, making sure to spread it evenly over the entire surface.
  3. Place in preheated oven and bake for about 10 minutes, until lamb and dough is cooked through. Meanwhile, mix lemon juice with tahini and water; season with pepper to taste and add arugula. Toss to completely coat arugula.
  4. When pizza has finished cooking, remove from oven and allow to sit for a few minutes. Top with arugula mixture, cut into slices, and serve hot or at room temperature.
