Turn Pizza Dough into Delicious Agnolotti!

Want to give your customers something completely new and different? Want to make it even better by
choosing an item totally authentic and Italian? Then you need to start offering agnolotti! But what is it, and how do you make it with pizza dough?

It’s easy.

Agnolotti is much like ravioli, but it’s stuffed with meat and vegetables instead of mainly cheese. In fact, cheese is not usually included within the agnolotti packets, although sprinkling Parmesan cheese on top can make them especially delightful!

So how do you make them?

Start by laying out a sheet of thin pizza crust on a well-floured surface. If you can, try rolling the dough out even more thinly, as you’ll need it as thin as possible. Cut it into large squares that are about 2” x 2”. Place on each square braised beef or pork. Carefully close up each square, being sure to pinch it firmly along each side so nothing leaks out; and then just boil them up!

Agnolotti will cook in just a few minutes in rolling boiling water, and your customers will love them! Serve with a side of pesto sauce, along with that shaving of Parmesan, and watch them fly out of your kitchen!
