They also want a variety of dips and salsas to dunk them in; and no assortment is complete without the basic tomato salsa. Here’s a recipe that’s really easy to make and doesn’t require too many ingredients.
Ingredients:
- 8 large fresh tomatoes, finely chopped
- 1 ½ onion, finely chopped
- 1 green pepper, finely chopped
- 1 bunch coriander, finely chopped
- 2/3 cup balsamic vinegar
- 2 teaspoons coarse salt
- 1 teaspoon pepper
Instructions:
- Combine all ingredients in a very large bowl or pot and place in the refrigerator to store for at least 12 hours. This will allow the flavors to fully develop and marry together. To speed up this process, you can boil the mixture on the stovetop, but it should be served completely chilled.
