Tips for Grilling Pizza Dough

Grilling Pizza DoughOffering grilled pizza dough can be a great treat for your customers, and you can really up the gourmet factor when you cook it this way. But cooking frozen pizza dough this way is much different than just placing it in the oven with all the toppings on. Even if you’re using a flat top and don’t have grill bars to contend with, you still have to be careful, because without the air flow of an oven, you can only cook one side at a time.

Unlike cooking oven pizza, don’t place any toppings on the pizza before you start cooking. Instead, place it on the grill and allow one side to cook for a few minutes until it becomes golden brown (and charred in a few spots is especially desired.) Then, make sure you have all your toppings ready because you’ll only have a few minutes to let them cook fully through before it’s time to take it off the grill.

Once one side has cooked through, flip the package dough over and then start placing your sauce and toppings on the side facing up, the side that’s already been fully cooked. If you can, cover the pizza at this point by either closing the grill top or just placing a very large lid over top. If you don’t have a lid large enough, a sheet of aluminium foil will work just as well.
