Thin Pizza Crust Covered in Seafood!

Par Baked ShellsThere are fewer ingredients that are as elegant and luxurious as seafood, so why not top them with thin pizza crust and make something truly special? Use pesto as your pizza garnish to take it up to yet another level!

Ingredients:

  • 1 package dough
  • 1 jar of pesto
  • ¼ cup Monterey Jack cheese, shredded
  • ¼ cup Swiss cheese, shredded
  • ¼ pound uncooked bay scallops
  • ¼ pound baby shrimp, peeled and deveined if necessary
  • ¼ pound crabmeat, real or imitation

Instructions:

  1. Preheat oven according to package instructions.
  2. In a medium-sized bowl, combine all cheese and mix thoroughly to combine.
  3. Spread the pesto onto the pizza dough in a thin layer, leaving about an inch untouched along the edge.
  4. Layer on the seafood in this order: scallops, crabmeat, and then baby shrimp, making sure that you’re not layering shellfish over shellfish (this will make for a prettier final product.)
  5. Place the pizza in the oven and cook until the cheese is melted, fish is cooked, and crust has baked up golden and crisp.

To make this dish even more appealing (as if you needed to,) sprinkle a little fresh chopped cilantro onto the shellfish once it’s all cooked to give it just a touch more color.
