Turning your wholesale pizza dough into wholesome and delicious pizza pockets is really as easy as making a calzone or Stromboli – you’re just using different ingredients. With that said, here’s how to make yummy veggie pockets.

Roll out commercial pizza dough into small circles, about the same size you’d use for personal pan pizzas. In the center of each place: two tablespoons of chopped rice chopped up vegetables such as green or red peppers, spinach, mushrooms, or broccoli, a teaspoon of Parmesan cheese, and a teaspoon of cheddar cheese.

Turn your oven to 350 degrees and allow it to preheat while you fold the dough over the pockets. To do this, simply wet one edge with a small amount of water, fold the dough over, and press lightly to seal. Pinch lightly or, press down with a fork to make sure the seal is tight, and none of those delicious toppings will fall out.

If you’d like, you can mix one egg yolk with a bit of water to make an egg wash, and then brush this over the dough just before popping it into the oven. This will give it a nice sheen once it’s done baking. Place in the oven and cook for about 15 minutes until the dough is crisp and golden. Once done, remove from the oven and allow to rest for about 2 minutes before slicing open to reveal the delicious, veggie cheesiness inside!
