Sub Rolls Need a Pick Me Up? Try This Do Chua Recipe!
If you’re already using your sub rolls to make Banh Mi sandwiches, then you must have this popular Vietnamese condiment to top them with. You can find premade jars of do chua, but this recipe is so easy, and your customers will be able to tell you made it from scratch!
Ingredients:
- ½ pound carrots, julienned
- ½ pound daikon radish, julienned
- 4 cups warm water
- 3 – 5 tablespoons sugar
- 2 tablespoons coarse salt
- 6 tablespoons rice vinegar
Instructions:
- Into a large bowl stir water, vinegar, sugar and salt. Combine well, stirring constantly, until both sugar and salt have completely dissolved.
- Place carrots and radishes in an airtight container and cover with water/vinegar mixture. Seal container tightly and place in fridge for at least three days to allow flavors to combine and vegetables to pickle. Do Chua can be stored for up to three weeks in the fridge and can be used for sandwiches, salads, or anything else you need a sour/tangy twist!
