Romesco Sauce for Your Pizza Dough: It’s Red, but Tomato-Free!

Want to top your business’ pizza dough with a different kind of red sauce? Offer Romesco sauce on your menu and give up the name, or let your customers guess and see who knows what it is. Either way, this pizza garnish is a delicious alternative to regular old pizza sauce, and is a great way to add a new twist to your pizza.
Ingredients:
  • ¼ cup pine nuts (use soy nuts if you want to keep it allergen-free)
  • 4 cloves garlic, whole and peeled
  • 1 tablespoon dried rosemary
  • 1 tablespoon dried oregano
  • 2 large red peppers, washed and patted dry
  • 2 tablespoons red wine vinegar
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1 pinch cayenne pepper
  • ½ cup extra virgin olive oil
  • 1 tablespoon vegetable oil
Instructions:
1.) Preheat the broiler. When ready, place red peppers on a baking sheet and drizzle with vegetable oil. Place four inches from heat in oven and broil for approximately 5-7 minutes, until the skins start to blacken.
2.) Remove peppers from oven and place in a large paper bag. Fold tightly to close, and allow peppers to fully cool within the bag.
3.) When peppers have cooled, the skin will peel back easily. Remove skin from both peppers, halve and deseed them, and set aside.
4.) Place nuts in a food processor and blend until they are finely chopped and resemble grains of sand. To the processor add garlic, rosemary, and oregano. Pulse the mixture until it is all finely and evenly chopped.
5.) Add into the mixture the roasted red peppers, vinegar, sugar, salt, and cayenne pepper. Pulse the processor once again to completely mix all the ingredients.
6.) With the processor on a continuous blend, drizzle olive oil into the mixture slowly until it becomes completely incorporated, the sauce thickens slightly, and the sauce becomes smooth.
