If you’re going to be offering a Take and Bake service from your restaurant, where a customer picks up pizza dough from you and takes it home to bake, you’re going to need self-rising pizza dough. And maybe even more importantly, you’re going to need to know how to use it.

Ideally, self-rising dough should be thawed before it’s placed in a hot oven. This will allow the dough to cook through fully through, and finish at the same time as the toppings. If you’re offering Take and Bake that the customer tops themselves at home, you need to either offer defrosted dough; or instruct them to do so when they get home. However, if you need to be able to offer your customers a product that will keep longer, you can still thaw this dough, but it should be freezer to oven dough.

Dough that can be placed directly in the oven from frozen will still allow the dough to rise during the baking process. To accommodate a Take and Bake service, this dough should be topped before being frozen; and the entire thing should be cooked in an oven that begins cool. This will allow both the dough and the toppings to slowly thaw at the same time the dough does.
