freezer to oven doughDo you want to give your customers something really different? Something that’s truly gourmet? Then serve them this Blue Cheese Pizza with Pears and Arugula! They won’t know what hit them, and when you use freezer to over dough, it couldn’t be easier!

Ingredients for two pizzas:

  • 1 frozen pizza dough, defrosted
  • 3 cups arugula
  • ½ cup blue cheese, crumbled
  • 2 pears (preferably Bosc but any kind will do,) very thinly sliced
  • 3 tablespoons whipping cream
  • 4 teaspoons grainy mustard
  • 2 teaspoons Dijon mustard
  • 1 ½ teaspoons fresh lemon juice
  • ½ teaspoon honey
  • 2 tablespoons olive oil, plus more for brushing
  • 1 pinch cayenne pepper

Instructions:

  1. Preheat pizza oven to temperature normally used for cooking pizza (this will vary for everyone.) In a small bowl whisk cream with mustards, lemon juice, and honey; set aside. Toss pear slices with olive oil and make sure they’re completely coated.
  2. Cut pizza dough in half and shape it into an oval. Brush with olive oil and sprinkle with cayenne. Layer in this order: half of arugula, half of pear slices, half of blue cheese. Drizzle with more olive oil.
  3. Place pizza in hot oven and bake for 12 to 15 minutes until the edges are golden and cheese has melted.

Serve this up with the mustard sauce on the side, and then just wait for all of your customers’ raving reviews!
