How to Quickly Reheat Frozen Rolls

brown betty recipe from DeIorios

In an ideal world, you’d always have defrosted rolls on hand to warm up whenever a new order comes up in your restaurant’s kitchen. But sometimes things get especially busy in the kitchen, and sometimes people order more sandwiches and bread baskets than usual. When that happens, you’ll need to reheat your frozen rolls, and you’ll need to do it quickly. The question is, how do you?

Start by placing the rolls in a large microwave-safe bowl. Wet a few paper towels and then wring out so that they’re damp, but not soaked. Cover the rolls with the paper towel, making sure that the tops are completely covered. Microwave for a minute at a time, checking after each minute to ensure that the rolls are defrosting, not cooking.

Once the rolls are completely defrosted, you can then wrap them up completely in aluminium foil and pop them in the oven to warm for a few minutes; or simply leave them in your warming drawer so that they’re ready to go for that next order.

And, when you have frozen breadsticks or frozen bread dough that needs defrosting and reheating very quickly, this trick works for these products, too.
