Homemade Pizza Meets Homemade Fried Chicken

Package DoughDid you know that July 6 is National Fried Chicken Day? And did you know that if your pizzeria sells mainly, well – pizza – you can still get in on the fun? With homemade pizza topped with juicy fried chicken, you can offer your customers two of the best comfort foods in one.

Ingredients:

  • 1 cup all-purpose flour
  • Salt and pepper to taste
  • ½ cup lard or vegetable shortening
  • 4 bone-in chicken pieces, uncooked
  • 1 package frozen pizza dough
  • 2 tablespoons all-purpose flour
  • 3 tablespoons buttermilk, plus more if needed
  • 1 cup mozzarella cheese

Instructions:

  1. To make the chicken, begin by rinsing all chicken pieces and thoroughly patting them dry. Place the cup of flour into a paper bag, add salt and pepper, and shake to mix thoroughly. One by one drop chicken pieces into the bag and shake to coat thoroughly. Remove from bag and rest chicken on baking sheet or plate. Allow to rest for a full 20 minutes without touching.
  2. Heat up ½ cup lard or vegetable shortening in a heavy cast-iron skillet. When hot add the chicken pieces, cover pan, and lower heat to medium. Allow to cook for about 6 minutes before flipping chicken over and cooking for another 6-8 minutes on the other side. When chicken is fully cooked through, remove from pan and set on paper towels to drain.
  3. Allow chicken to cool enough to handle it. Then, rip it apart so that you are left with shredded chicken meat.
  4. Meanwhile, lower the heat under the chicken fat and add 2 tablespoons of all-purpose flour. Whisk through thoroughly and allow to cook for 2 minutes. Slowly begin adding buttermilk, whisking constantly while doing so. Add salt and pepper to taste and then set aside to cool.
  5. Preheat broiler.
  6. Remove package dough from wrapping.
  7. Spread a thin layer of gravy over the dough, top with shredded chicken, and then top with shredded cheese.
  8. Place under broiler and allow to cook for about 2 minutes, until cheese is melted and golden bubbly.

When pizza’s ready to slide out of the oven, allow to cool for two minutes and then cut into slices. Your customers will never have been so happy!
