For the Month of Mardi Gras, Turn Your Sub Rolls into Po’boys!

If you love offering your customers new specials and themed menu items, then February is a great time to do it! The month of Mardi Gras means tons of great New Orleans fare to choose from, giving you lots of uses for your wholesale bread. One of the most popular foods around The French Quarter this time of year are po’boys, and you can use the sub rolls in your freezer to make them!

Ingredients:

  • 3 pounds stewing beef
  • 3 tablespoons lard
  • 3 tablespoons Cajun seasoning
  • 6 – 12 rolls
  • 6 tablespoons butter
  • 6 tablespoons mayonnaise
  • 1 head iceberg lettuce, shredded
  • 12 – 24 pickle slices
  • 3 beefsteak tomatoes, sliced

Instructions:

  1. Start by searing the beef to prepare it for slow-cooking. Rinse and pat the meat dry while heating up 3 tablespoons of lard in a Dutch oven over high heat. When lard is hot, add meat, in batches if necessary, and cook until fully browned on all sides. Repeat with remaining batches of meat.
  2. Transfer meat, and all juices collected during the searing process, into a slow cooker. Cover and set on high for about 4 – 5 hours, until meat pulls apart easily with a fork.
  3. Remove the meat from the slow cooker and allow it to cool slightly. Meanwhile, transfer the juices to a separate pot and boil to help reduce until only about 1/3 of the sauce remains.
  4. When meat has cooled, pull it apart using two forks and set in large bowl. Pour reduced au jus over the shredded beef, and stir.
  5. Preheat oven to 400 degrees Fahrenheit and place open-faced rolls inside for 4 – 5 minutes, or until they are lightly toasted.
  6. Remove from oven and spread butter on each half right away. It should melt into the bread. Then top bottom half of the roll with pickle slices, lettuce, tomato, and beef. Spread top half of the roll with mayonnaise and place on the sandwich.
