Celebrate the Day with Potatoes on Pizza Crust!

deiorios dough ballPotatoes might not be the first thing you think about as a topping for pizza crust, but how else are you going to help your customers celebrate Potato Day on August 19th? This recipe is really easy and, if we do say so ourselves, quite delicious too!

Ingredients:

  • 1 pizza dough ball
  • 2 potatoes, sliced very thinly with a mandolin
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 red onion, cut in half and then sliced thinly
  • 2 tablespoons dried rosemary
  • ½ cup Parmesan cheese, freshly grated
  • Salt and pepper to taste

Instructions:

  1. Preheat oven to 400 degrees Fahrenheit, and bring a large pot of salted water to a boil. Once boiling, lower heat and bring to a bare simmer. Then gently place in potato slices and allow to steam for about 5 minutes, making sure that potatoes are still firm when taken out of the water. Remove and drain fully.
  2. Meanwhile, place olive oil in a skillet over medium heat on the stovetop. When hot add onion, garlic, and rosemary. Stir and cook for about 10-15 minutes, until onions are soft and carmalized.
  3. When potatoes and onion mixture are both done, sprinkle Parmesan cheese over package dough. Lay potato slices over top, slightly overlapping them to form a base. Top with onion mixture and sprinkle lightly with salt and pepper.
  4. Place pizza in the oven and cook for 10-15 minutes, until cheese has melted and crust is golden brown.

This pizza is so delectable, you could even get away with calling it gourmet!
