Are Heat Lamps Hurting Your Pizza Dough?

You walk into a pizzeria, a takeout restaurant, or a cafeteria, and you see that glass case filled with many different types of pizza slices, all being warmed by a heat lamp. But while this might be a good way to show your customers the slices of New York pizza dough, it’s probably not doing much for your pizza dough.

The problem is that restaurant owners fill up this glass case with pizza slices that are already fully cooked. And so when they sit under the heat, the pizza crust simply dries out the longer it sits under that heating lamp. Luckily, there is a better way to do it.

Still place your slices into that glass case so that your customers can still see what’s on offer that day. But don’t turn that dreaded heat lamp on. Instead, warm the slices up in the oven as they’re ordered. The crust will only be exposed to more heat for a short amount of time, ensuring that no damage is done to it within that time. Your customer will still get a piping hot piece of pizza, will know what’s available, and you’ll be able to offer a better product.

Take your pizza out of the warming lamp and put it where it belongs – in the oven! You and your customers will both be happier for it.
